What is Kolsch Service?
Kölsch service is a traditional way of serving Kölsch beer in Cologne, Germany. It involves serving the beer in small, 0.2-liter glass called a stange. The servers, known as köbes, carry a circular tray called a kranz. They walk around the tables and replace empty stangen with full ones, without having to be asked. Each time a stange is replaced, a tally mark is written on the your coaster. When you're finished, place the coaster on top of your glass. Kölsch service is a way of ensuring that you always have a fresh, cold beer. It is also a way of creating a sense of community and camaraderie.
